Mini meringues

Now I've done it once, I don't appear to be able to stop. This afternoon - mini meringues for a gooseberry Eton mess of sorts.

Really quick and easy -
1. Preheat oven to 120C
2. Line 2 trays with baking paper
3. Whisk 2 large egg whites until peaky
4. Now add 100g caster sugar as you whisk, and a dash of vanilla extract
5. When thick and glossy, dollop messy spoonfuls onto the baking trays
6. Pop in the oven for 1 to 1 1/2 hours
7. Leave to cool in the oven until firm and cool

We're going to nibble on these at our posh picnic tomorrow night at Hampton Court Flower Show. The weather is meant to be dreadful, so I will be dusting off my pink polka dot wellies and wrapping up warm.

  1. The weather really is meant to be horrid - I've been checking as Mark is camping for the next 3 days. Now that's bad timing.
