Simple suppers - Baked ham and egg cups

Hope you had a lovely weekend. Aren't we having freaky weather? A muggy, foggy London today, scorchio temperatures forecast for tomorrow followed by a wind chill factor of 5C on Wednesday. How delightful.

I was home alone on Saturday night and needed to rustle up a simple supper from a very sad looking fridge.


One egg + one slice of ham + one ramekin = easiest dinner ever.


Preheat the oven to 200C
Oil the ramekins
Place the ham in the ramekins, folding around the edges to make it fit
Crack in an egg
Season
Grate some Parmesan over the top
Pop in the oven on a baking tray for 12 minutes or until the white is just set
Serve immediately with fresh bread and some fresh parsley

Would make a fab breakfast too.
