Simple suppers - stuffed pancakes

Another snow day today, but at least the sun came out, there was a definite thaw and the birds began to sing. We've got a little troupe of long-tailed tits which swoop into the garden hungry for the peanuts.

These Abra-ca-Debora pancakes are a new discovery. Naturally, it was the packaging that drew me in. We found them in Sainsbury's the other week and they've turned out to be rather useful to have in the fridge for simple suppers. We're both working silly hours at the moment and need supper that can be quick to throw together and is vaguely healthy. Once open they keep for 3 days, and can be stuffed with all sorts of things. This evening I was cooking solo so stuffed a couple with a cooked down mix of leftover roast chicken, mushroom, garlic, creme fraiche, cream cheese and spinach. Stuffed and popped in the oven with a dusting of cheddar for 10 minutes. Scrummy.
