Birthday pudding

Whipped cream, fresh fruit and sponge cake - you couldn't ask for a better combination.

Sponge base - Nigella's cupcake recipe - split between two tins (30 mins to prep and cook). Leave to cool, then layer with strawberry jam, then pile high with whipped cream (with a dash of icing sugar) and fresh fruit. 

A delicious birthday pudding - always gets an 'ooo' when it arrives on the table.
