Valentine rhubarb trifle

Layer 1 - Victoria sponge
Layer 2 - stewed rhubarb
Layer 3 - mascarpone, vanilla and sugar (needed a dash of cream)
Layer 4 - crumble

Somewhat improvised, but darn tasty.

  1. Mmmmmmmmmmmm...(I like to cook my rhubarb with rose water so might combine both ideas into a rosy rhubarb trifle!)
